Organic is typically more forgiving and less harsh. Ceramic is a little stiffer and will give you more bit. Depending on your mods, just stick with a nice simple ACT setup or stock.

does it matter if the clutch is a turbo clutch or a n/a clutch as my talon is n/a?

Well I don't think it necessary matters since clutches don't really differentiate between turbo/na. Just make sure you get a clutch that fits in your transmission. Make sure you get a full face clutch, not a puck-style clutch.

First off put that idea away until you actually need aftermarket injectors. If the fuel consumption is the same then it won't matter that you the aftermarket ones. Trying to stuff as many parts into an engine without cohesiveness is a bad way to go...

Moderation wins

and on the subject of whether or not the car is turbo charged or not, does it matter when it comes to exhaust if the car is turbo charged or not?

^Stick with a full face clutch(full complete circle). Reason being is that puck clutches are non-street clutches and are much stiffer, so it's harder on your leg and for daily driving. As for the exhaust, stick with a N/A. You don't want your exhaust having too big of a diameter, since you'll lose power.
